Red Pepper Jam Pasta Salad

This pasta salad will have you coming back for more!

A few ingredients that go very well together and make for a hearty salad. Serve the salad for lunch or at a dinner party. It is also a great dish to have in a salad buffet at a party.

If you are a fan of red pepper jam, you will have no trouble finishing a large bottle of it, as you can use it to add a satisfying kick to cold and hot foods. Red pepper jam, which provides most of the flavour to this pasta salad, is also available in a smaller 260 g package.

Red Pepper Jam Pasta Salad

6 portions

  • 1½ L water
  • 1 tsp salt
  • 400 g Fusilli pasta
  • 250 g pulled pork or chicken
  • 250 g Emmental or other cheese
  • 200 g cheery or mini plum tomatoes
  • 200 g black or green grapes
  • 1 pot parsley or coriander
  • 3–4 dl Herkkumaa Devil’s Red Pepper Jam

Method

  • Boil the water and add the salt and pasta.
  • Boil for 7–8 minutes until the pasta is al dente.
  • Drain the pasta and rinse it with cold water to stop cooking.
  • Put the pulled pork or chicken into a bowl and add diced cheese, tomatoes and grapes.
  • Add the chopped parsley or coriander.
  • Add the cooked pasta and mix in the Devil’s Red Pepper Jam.
  • Serve!

Tip: Pasta absorbs liquids, so it is best to mix the red pepper jam with the salad ingredients just before serving.
