Herkkumaa’s delicious oven-baked potatoes
Crisp and delicious oven-baked potatoes.
Potato is a timeless classic that needs no introduction. Potatoes can be prepared in countless ways, whether mashing, boiling, sauteeing or frying. Here, we share our secrets for making crispy and delicious potatoes in the oven. These potatoes are an excellent accompaniment to steak or chicken. Add Herkkumaa Ketchup, Mayochup™ or other types of flavoured mayonnaise for a delicious finish.
Active time: 15–20 mins, oven time: 30–40 mins.
Oven-baked potatoes:
2–3 portions
- 500 g all-purpose potatoes
- 10–15 g olive oil
- 0.5 tsp baking soda
- Dried herbs and seasonings to taste, such as:
- Salt
- Pepper
- Paprika powder
- Garlic powder
- Dried or fresh herbs (oregano, thyme, mixed herbs)
- Herkkumaa Ketchup, Mayochup or other flavoured mayonnaise for dipping
Method:
- Cut each potato into four or six small cubes, depending on the size of the potato. You can also cut the potatoes into chips (French fries) or wedges. Preheat the oven to 220°C (or 200°C for fan-assisted ovens or airfryers).
- Put the potatoes in a pan to boil and add a little salt to the water, along with half a teaspoon of baking soda. Boil the potatoes for 5–7 minutes. The baking soda makes the water alkaline, which breaks down the potato’s structure and helps it crisp up in the oven.
- When the potatoes are cooked, drain the water from the pan and add the oil. Mix the potatoes so the oil covers all the potatoes.
- Tip the potatoes onto a baking sheet lined with baking paper and arrange them so they are not on top of each other.
- Cook the potatoes in the preheated oven for 30–40 mins until they are golden and crispy. Tip: When the potatoes have been in the oven for 20 mins, turn them over using a spatula turner. Ovens often have an uneven heat, so by turning the potatoes over, you can ensure that they are all cooked to a beautiful, crispy finish.
- When the potatoes are ready and still hot, you can sprinkle over some dry spices of your choice. We recommend salt, pepper, dried thyme and garlic powder. Fans of spicy foods can also try a little cayenne pepper or chipotle powder.
- Serve with Herkkumaa Ketchup or Mayochup and enjoy!
