Quesadillas with Red Pepper Jam

Quesadillas, originally from southern Mexico, are delicious and easy to adapt according to your preferences or the contents of your fridge. In simple terms, quesadilla means a filled and fried tortilla.

Make these hearty quesadillas in the Herkkumaa style, with red pepper jam as a delicious finishing touch. Quesadillas are ideal for the whole family and are a great way to use up any leftover meat, vegetables or cheese in your fridge.

Quesadillas:

  • Wheat tortillas 1 pack
  • Chicken, other meat and/or vegetables (red pepper, onion, rocket, spinach)
  • 1 pack Herkkumaa Devil’s Red Pepper Jam
  • Grated cheese to taste
  • Oil for frying
  • Salt

Method:

  1. Fill half of the tortilla with your chosen filling of meat or vegetables. We recommend chicken with fajita or chipotle spices, fried onions and rocket.
  2. When half of the tortilla is full, grate cheese over the filling. Monterey Jack, Cheddar or Havarti cheeses are suitable for this.
  3. Add some red pepper jam before closing the tortillas to bring a little sweetness to the quesadillas along with the other flavours.
  4. Close the quesadilla and fry it in oil over a medium heat (at 4 on a scale from 1 to 6, or at 7 on a scale from 1 to 9).
  5. Fry for 2–4 minutes until the quesadilla is golden brown on the first side. Tip: When you turn the quesadilla, sprinkle a little fine salt onto the cooked surface. This brings the whole creation to life.
  6. Fry the other side for 1–2 minutes or until golden brown.
  7. Cut in half and serve immediately. Tip: Try dipping the finished quesadilla in red pepper jam or Herkkumaa mustard mixed with a little Tabasco or other spicy sauce!
